Low Carb Apricot Souffles

A light and fluffy apricot souffle that is low in carbs.

  1. 1Preheat oven to 350°F.
  2. 2Spray 4 individual souffle cups with cooking spray.
  3. 3In a large bowl, combine egg yolks with lemon zest and apricot jam.
  4. 4In a separate bowl, beat egg whites with an electric mixer until they form soft peaks, then fold them into the yolk mixture.
  5. 5Fill each souffle cups 3/4 full and bake for 10 to 15 minutes.
  6. 6Sprinkle cinnamon and almonds over the top and serve.
