Crunchy Meringue Cherry Bars

  • (6) egg whites
  • (3/4 tsp.) cream of tartar
  • (2 tsp.) vanilla extract
  • (2 cups) sugar
  • (2 cups) crushed saltines (about 60 crackers)
  • (1/2 cup) chopped pecans
  • (8 oz. carton) frozen reduced-fat whipped topping, thawed
  • (20 oz. can) reduced-sugar cherry pie filling

Crunchy Meringue Cherry Bars

Light meringue bars with saltines and pecans topped with whipped cream and cherry pie filling.

  1. 1Preheat oven to 350°F. Spray a 13x9 in. baking dish with cooking spray.
  2. 2Use an electric mixer to beat egg whites until foamy. Beat in cream of tartar and vanilla, continue to beat to soft peaks.
  3. 3Add 1 Tbsp. sugar at a time, while beating, to form stiff peaks. Add saltines and pecans, fold to combine. Pour into greased baking pan.
  4. 4Bake 20-25 minutes, or until lightly browned. Set aside on a wire rack to cool. Just before serving, top with whipped topping and pie filling.
