Instructions
1Preheat the oven to 375°F.
2Whisk together raspberry fruit with lemon juice in a large bowl, set aside.
3In a small bowl, use an electric mixer on High to beat together egg whites and cream of tartar until they form soft peaks. Add vanilla. While beating, slowly add sugar, beat until stiff peaks
form.
4Add 1/3 of egg whites into raspberry mixture, fold to combine. Add remaining egg whites, fold again. Pour into an even layer in a 1 1/2 quart souffle dish.
5Bake 15-18 minutes, or until puffy and golden. Serve and enjoy!
