Almond Chocolate Chip Cookies

  • (1/3 cup) butter, softened
  • (1/2 cup) sugar
  • (1/3 cup) packed brown sugar
  • (1) egg
  • (2 Tbsp.) Amaretto
  • (1/2 tsp.) almond extract
  • (1 cup) all-purpose flour
  • (1 cup) oat flour
  • (1 tsp.) baking powder
  • (1 tsp.) baking soda
  • (1/4 tsp.) salt
  • (3/4 cup) miniature semisweet chocolate chips
  • (2/3 cup) sliced almonds, toasted

  1. 1Preheat oven to 350°F. Spray 2 baking sheets with cooking spray.
  2. 2Use an electric mixer on medium to beat together butter and sugars for 2 minutes. Beat in egg, Amaretto and almond extract.
  3. 3In a medium bowl, whisk together flours, baking powder, baking soda and salt. While beating on low, gradually add to butter mixture. Add chocolate chips and almonds, stir by hand to combine.

  4. 4Lightly flour your hands. Shape dough into 1 inch balls and place on baking sheets, leaving 2 inches in-between each cookie. Spray the bottom of a glass with cooking spray, flatten cookies slightly.

  5. 5Bake 7-9 minutes, or until lightly browned. Cool on wire racks and serve.
