Pumpkin Pie Rice Pudding

  • (2 quarts) water
  • (1 cup) Arborio rice
  • (4 cups) skim milk
  • (1) vanilla bean, split lengthwise
  • Pinch of salt
  • (1/3 cup) white sugar
  • (15 oz. can) pumpkin puree
  • (1 tsp.) ground cinnamon
  • (1/2 tsp.) ground ginger
  • (1/4 tsp.) ground nutmeg
  • (1/2 cup) raisins
  • Ground cinnamon, for garnish

Pumpkin Pie Rice Pudding

A creamy rice pudding flavored with pumpkin, cinnamon, ginger and nutmeg.

  1. 1Place water in a large saucepan and place over High heat. When boiling, add rice. Simmer on medium-low 7 minutes. Drain, set aside.
  2. 2Place saucepan back over medium-high heat. Add milk. When boiling, add rice, vanilla bean and salt. Simmer on medium-low 15-18 minutes, stirring often. Take off heat, remove vanilla bean. Add sugar, stir.

  3. 3Preheat oven to 350°F. Spray a 2 quart baking dish with cooking spray.
  4. 4In a large bowl, combine half of rice pudding, pumpkin puree, cinnamon, ginger and nutmeg. Pour into baking dish. Add raisins to other half of rice pudding, pour into baking dish.

  5. 5Bake 30 minutes, or until firm. Sprinkle with cinnamon and serve.
