Carrot Cake w/Cream Cheese Drizzle

  • (2 1/4 cups) all-purpose flour
  • (2 tsp.) baking soda
  • (2 tsp.) ground cinnamon
  • (1 tsp.) ground ginger
  • (1 tsp.) baking powder
  • (1 tsp.) salt
  • (2 large) eggs
  • (2 large egg whites
  • (1 cup) granulated sugar
  • (3/4 cup) packed dark brown sugar
  • (8 to 8 1/4 oz. can) crushed pineapple (in juice)
  • (1/3 cup) canola oil
  • (1 Tbsp.) vanilla extract
  • (10 oz. bag) shredded carrots
  • (1/2 cup) dark raisins
  • (2 oz.) reduced-fat cream cheese, softened
  • (3/4 cup) confectioners’ sugar
  • (1/2 tsp.) low-fat milk
  • (1/4 tsp.) vanilla extract

Carrot Cake w/Cream Cheese Drizzle

  1. 1Preheat oven to 350°F. Spray a nonstick Bundt pan with cooking spray and dust with flour. In a medium bowl, mix together flour, baking soda, cinnamon, ginger, baking powder and salt.

  2. 2In a separate large bowl, use an electric mixer on medium to beat together eggs and egg whites. Add white and brown sugars, beat another 2 minutes.

  3. 3With mixer on low, beat in pineapple (w/juice), oil and vanilla. Beat in dry ingredients until combined. Add carrots and raisins, stir to combine. Pour into prepared pan.

  4. 4Bake 45-50 minutes, or until a toothpick comes out clean. Cool 10 minutes in pan, invert onto a wire rack to cool.
  5. 5Meanwhile, combine cream cheese and 1/4 cup sugar. Whisk in milk, vanilla and rest of sugar until combined. Drizzle over cake and serve.
