Almond Cherry Cake Bars

  • (2/3 cup) reduced-fat stick margarine, softened
  • Sugar substitute equivalent to 3/4 cup sugar
  • (1/4 cup) honey
  • (1) egg
  • (1 tsp.) almond extract
  • (2 cups) all-purpose flour
  • (2 tsp.) baking powder
  • (1/2 tsp.) baking soda
  • (1/2 tsp.) salt
  • (3/4 cup) fat-free milk
  • (2/3 cup) ground almonds
  • (1/2 cup) dried cherries, finely chopped

  1. 1Preheat oven to 325°F. Spray a 13x9 in. baking pan with cooking spray.
  2. 2Use an electric mixer to beat together margarine, sugar substitute and honey. Add egg and almond extract, beat to combine.
  3. 3In a medium bowl, combine flour, baking powder, baking soda and salt. While beating, alternately add dry ingredients and milk to margarine mixture, starting and ending with dry ingredients.

  4. 4Add almonds and cherries, stir by hand to combine. Pour into prepared pan. Bake 25-30 minutes, or until a toothpick comes out clean. Cool on a wire rack and serve.
