Banana Walnut Raisin Oat Cookies

  • (2 cups) uncooked regular oats
  • (1 cup) raisins
  • (1 cup) chopped walnuts
  • (1/2 tsp.) salt
  • (1 1/2 cups) mashed banana (about 3 medium)
  • (1/3 cup) vegetable oil
  • (1 tsp.) vanilla extract

Banana Walnut Raisin Oat Cookies

Chewy oatmeal cookies loaded with banana flavor, raisins and chopped walnuts.

  1. 1In a large bowl, combine oats, raisins, walnuts and salt. In a separate bowl, stir together banana, oil and vanilla. Add to oat mixture, stir and set aside for 15 minutes.

  2. 2Preheat oven to 350°F. Set out 2 baking sheets.
  3. 3Measure rounded tablespoonfuls and drop them onto the baking sheets. Bake 15 minutes, or until light golden brown. Cool on wire racks and serve.
