Butterscotch Pudding Bars

  • (1 1/2 cups) graham cracker crumbs
  • Sugar substitute equivalent to 1/2 cup sugar, divided
  • (6 Tbsp.) butter, melted
  • (2 8-oz. packages) reduced-fat cream cheese
  • (3 cups) cold fat-free milk, divided
  • (2 1-oz. packages) sugar-free instant butterscotch pudding mix
  • (8 oz. carton) frozen reduced-fat whipped topping, thawed
  • (1/2 tsp.) rum extract

Butterscotch Pudding Bars

Butterscotch pudding layered over cream cheese and a graham cracker crust.

  1. 1Spray a 13x9 in. dish with cooking spray.
  2. 2In a small bowl, mix together cracker crumbs, 1/4 cup sugar substitute and melted butter. Press into the bottom of prepared baking dish.
  3. 3Use an electric mixer to beat together cream cheese, 1/4 cup milk and 1/4 cup sugar substitute until smooth. Pour over crust.
  4. 4Pour rest of milk into a medium bowl. Add pudding mix, whisk 2 minutes, set aside 2 minutes. Pour over cream cheese.
  5. 5Stir rum extract into whipped topping, spread evenly over top. Refrigerate at least 4 hours. Enjoy!
