  • (2 1/4 cups) all-purpose flour
  • (1 tsp.) baking powder
  • (3/4 tsp.) baking soda
  • (1/4 tsp.) salt
  • (1/3 cup) unsweetened cocoa
  • (1/2 cup) margarine, softened
  • (1/3 cup) sugar
  • (1/2 cup) "measures-like-sugar" brown sugar calorie-free sweetener
  • (1/2 cup) egg substitute
  • (1 tsp.) vanilla extract
  • (2/3 cup) finely crushed sugar-free peppermint candies

  1. 1Preheat oven to 350°F. Spray a baking sheet with cooking spray.
  2. 2In a medium bowl, combine flour, baking powder, baking soda, salt and cocoa, set aside.
  3. 3Use an electric mixer on medium to beat margarine until creamy, then beat in sugar and sweetener until combined. Beat in egg substitute and vanilla.

  4. 4Add flour mixture, stir with a wooden spoon to combine. Add candy and stir. Use waxed paper to roll 1 Tbsp. dough into balls.
  5. 5Place on greased baking sheet and flatten with a fork. Bake 10-12 minutes, cool and serve.
