Bourbon Brownies

Ingredients:
  • (1 cup plus 5 Tbsp.) margarine or butter, divided
  • (4 squares) unsweetened chocolate, 1 oz. each
  • (4 squares) semisweet chocolate, 1 oz. each
  • (2 1/4 cups) sugar
  • (6 large) eggs
  • (2 tsp.) vanilla extract
  • (1/2 tsp.) salt
  • (1 1/4 cups) all-purpose flour
  • (1/2 cup) pecans, toasted and coarsely chopped
  • (1/3 cup) packed light brown sugar
  • (3 Tbsp.) bourbon
  • (2 cups) confectioners' sugar

Bourbon Brownies

Sweet chocolatey brownies topped with a bourbon icing and toasted pecans.

    Instructions

  1. 1Preheat oven to 350°F. Place a sheet of foil in a 13x9 in. metal baking pan and spray the foil with cooking spray.
  2. 2Place a 3 quart saucepan over low heat. Add 1 cup margarine and chocolate. Stir every so often until melted. Take off heat and whisk in sugar and eggs.

  3. 3Add vanilla, salt and flour, stir until combined. Pour into greased pan. Bake 35 minutes. Cool on wire rack.
  4. 4Meanwhile, place a 2 quart saucepan over medium-low heat. Add 5 Tbsp. margarine and brown sugar, cook 5 minutes, or until bubbling. Take off heat and whisk in bourbon and confectioners' sugar.

  5. 5Spread over brownies, top with pecans. Cut into 64 brownies and serve.
