Instructions
1Place a medium saucepan over High heat to boil. Add 2 1/2 cups water and sugar. When boiling, add rind strips, then reduce heat to medium-high and simmer 5 minutes.
2Strain over a bowl and set aside to cool.
3When cool, combine juices with sugar. Pour into an ice cream freezer and freeze accordingly. Transfer into a freezer-safe container with lid, freeze 1 hour. Serve with grated orange and a spring of mint.
