Instructions
1Preheat oven to 350°F. Spray an 8 x 8 in. pan with nonstick cooking spray.
2Combine 3/4 cup flour and 3 Tbsp. sugar in a mixing bowl. Cut in butter. Empty into baking pan, press onto bottom. Bake 15 minutes.
3Use the same mixing bowl to beat egg and egg white with an electric mixer until frothy. Add rest of sugar and flour, lemon zest and juice, 1 Tbsp. water and baking powder.
4Beat 3 minutes, or until it starts to thicken. Remove crust from oven, pour lemon mixture on top of crust, bake 20-25 minutes or until light brown. Place on a wire rack to cool.
5Sift powdered sugar on top of bars,
serve.
