Light Chocolate Chip Cookies

Ingredients:
  • (3 Tbsp.) canola oil
  • (2 1/2 Tbsp.) light-colored corn syrup
  • (3/4 cup) packed brown sugar
  • (1/2 cup) granulated sugar
  • (1 1/2 tsp.) vanilla extract
  • (3 large) egg whites
  • (1 1/4 cups) all-purpose flour
  • (1 1/4 cups) whole wheat pastry flour
  • (1 tsp.) baking soda
  • (1/2 tsp.) salt
  • (1 cup) grain-sweetened chocolate chips (such as Sunspire)

Light Chocolate Chip Cookies

A lightened version of traditional chocolate chip cookies.

    Instructions

  1. 1In a large bowl, whisk together oil and syrup. Whisk in brown and granulated sugars until blended. Add vanilla and egg whites, stir to combine.

  2. 2In a separate bowl, combine white and wheat flours, baking soda and salt. Stir into sugar mixture until combined. Add chocolate chips, stir to combine, cover and refrigerate 1 hour.

  3. 3Preheat the oven to 375°F. Spray 2 baking sheets with cooking spray. Drop dough onto baking sheets by level tablespoons, leaving 2 inches between each cookie.

  4. 4Bake 8 minutes or until lightly brown around the edges. Cool for 2 minutes on the pans, then transfer to wire racks and cool completely.
