Dark Chocolate Coconut Cookies

  • (1 cup) whole wheat flour
  • (2/3 cup) unbleached white flour
  • (3/4 tsp.) baking powder
  • (1/2 tsp.) baking soda
  • (1/2 tsp.) ground cinnamon
  • (1/2 tsp.) salt
  • (1/2 cup plus 2 Tbsp.) less fat margarine (no trans fat)
  • (1/4 cup) light cream cheese or vanilla lowfat yogurt
  • (3/4 cup) packed brown sugar
  • (1 large) egg
  • (1 1/2 tsp.) vanilla extract
  • (2/3 cup) dark chocolate chips
  • (2/3 cup) flaked coconut
  • (1 cup) walnut pieces

  1. 1Preheat oven to 375°F. Line 2 cookie sheets with parchment paper.
  2. 2Whisk together flours, baking powder, baking soda, cinnamon and salt in a medium bowl, set aside.
  3. 3Use an electric mixer on medium to cream together margarine, cream cheese and brown sugar until fluffy. Add egg and vanilla, beat to combine. Gradually add flour mixture, beating after each addition.

  4. 4Add chocolate chips, coconut and walnuts, stir by hand. Drop by 1/8th cup measures onto baking sheet, leaving 2 in. inbetween each cookie. Bake 8 minutes, or until lightly browned. Cool on wire rack, serve.
