  • (1 cup) rolled oats
  • (1 cup) whole wheat flour
  • (1/2 cup) soy flour
  • (1 3/4 tsp.) baking soda
  • (1/2 tsp.) baking powder
  • (1/2 tsp.) salt
  • (2 tsp.) ground cinnamon
  • (1 tsp.) ground nutmeg
  • (1/2 cup) pumpkin puree
  • (1 Tbsp.) canola oil
  • (2 tsp.) water
  • (2) egg whites
  • (1 tsp.) molasses
  • (1 Tbsp.) flax seeds, optional

Sugar Free Pumpkin Oatmeal Cookies

Chunky oatmeal cookies with pumpkin, molasses and autumn spices.

    Instructions

  1. 1Preheat oven to 350°F.
  2. 2Combine Splenda®, oats, wheat flour, soy flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a large bowl. Add pumpkin, canola oil, water, egg whites, and molasses, stir to combine.

  3. 3Add flax seeds. Roll into 14 equal sized balls, place on a nonstick baking sheet and flatten with a fork.
  4. 4Bake 5 minutes. Cool on wire racks and serve.
