Oatmeal Chocolate Chip Cookies

Ingredients:
  • (5 Tbsp.) butter, softened
  • (3 Tbsp.) fat-free cream cheese
  • (1/2 cup) brown sugar, packed
  • (1/4 cup) granulated sugar or Splenda®
  • (1/4 cup) egg substitute
  • (3/4 cup) all-purpose or whole-wheat flour
  • (1/2 tsp.) baking soda
  • (1/2 tsp.) salt
  • (1 tsp.) pure vanilla extract
  • (1 cup) semisweet chocolate chips
  • (1 cup) quick-cooking oatmeal
  • (1/2 cup) pecans or walnuts, chopped (optional)

Oatmeal Chocolate Chip Cookies

Chunky oatmeal cookies with chocolate chips and your choice of pecans or walnuts.

    Instructions

  1. 1Preheat oven to 375°F. Spray 2 cookie sheets with canola oil cooking spray.
  2. 2Use an electric mixer to cream together butter, cream cheese and sugars until smooth. Add egg substitute, beat until combined. Add flour, soda, salt, and vanilla, beat well.

  3. 3Add chocolate chips, oatmeal and nuts, stir with a wooden spoon.
  4. 4Drop by rounded tablespoonfuls onto greased cookie sheets. Bake on center rack for 8 minutes or until lightly golden brown. Cool on wire rack and enjoy.
