Vegetable Bruschetta

  • (1) ripe avocado, peeled and diced
  • (1/2 cup) oven roasted tomatoes
  • (1/2 cup) roasted red and yellow peppers
  • (1/4 cup) pitted kalamata olives
  • (1/4 cup) fresh basil, chopped
  • (1 Tbsp.) Extra-virgin olive oil
  • Salt and pepper
  • (1) baguette, sliced thick

Vegetable Bruschetta

Thick toasted baguette slices topped with avocado, tomatoes, peppers and olives.

  1. 1Preheat broiler. Line a baking sheet with foil.
  2. 2In a medium bowl, toss together all ingredients besides baguette. Add a drizzle of olive oil.
  3. 3Place 1 Tbsp. olive oil in a small bowl. Use pastry brush to brush both sides of bread. Evenly distribute vegetable mixture on bread slices, broil 2-3 minutes or until bread is toasted.
