Roasted Bell Pepper Toasts
Garlic rubbed whole-wheat toast topped with roasted bell peppers and melted mozzarella cheese.

Instructions
1With rack 6 inches from heat,
preheat the broiler.
2Rub each slice of bread on both sides with cut garlic and place on a baking sheet.
3In a medium bowl, mix together peppers, basil, vinegar, salt and pepper to taste. Divide evenly between toasts, top with mozzarella and a drizzle of olive oil.
4Broil 1-2 minutes, or until cheese is melted and serve.
