Artichoke Pesto Mini Pizzas

  • (24 oz.) precooked, ready-to-heat polenta, cut into twelve 1?2" slices
  • (1/4 cup) low-fat marinara sauce
  • (2 Tbsp.) basil pesto, homemade or bottled
  • (1/4 medium) roasted red bell pepper, cut into thin strips
  • (4) artichoke hearts, thinly sliced
  • (3/4 cup) shredded low- or reduced-fat mozzarella or Italian cheese blend
  • Fresh basil or thyme

  1. 1Preheat oven to 400°F.
  2. 2Arrange the polenta slices on a baking sheet and bake for 16 minutes, flipping halfway through.
  3. 3Remove from oven and turn on broiler.
  4. 4Top each polenta square with 1 tsp. of marinara sauce, 1?2 tsp. of pesto, 1 strip of roasted bell pepper, artichoke slices and 1 Tbsp. of cheese.
  5. 5Broil for about 3 minutes or until cheese is melted, garnish with fresh basil or thyme and serve.
