Sesame Soy Rice Bites

Ingredients:
  • (2 cups) uncooked short-grain glutinous rice, rinsed and drained
  • (4 cups plus 2 Tbsp.) water, divided
  • (1/3 cup) dried baby shrimp
  • (1/2 oz.) Chinese sausage link, steamed and finely chopped
  • (3 tsp.) dark sesame oil, divided
  • (3/4 cup) green onions, thinly sliced
  • (4 cloves) garlic, minced
  • (8 oz. can) sliced bamboo shoots, drained and coarsely chopped
  • (1/3 cup plus 1 Tbsp.) lower-sodium soy sauce
  • (1 tsp.) fish sauce
  • (1/2 tsp.) granulated sugar
  • (1/4 tsp.) freshly ground black pepper
  • (1 cup) fresh cilantro, coarsely chopped
  • (2 tsp.) brown sugar
  • (1 tsp.) sesame seeds, toasted
  • (1/2 tsp.) chili garlic sauce

Sesame Soy Rice Bites

Hearty rice balls with baby shrimp, Chinese sausage and bamboo shoots served with a sesame-soy dipping sauce.

    Instructions

  1. 1Place 3 cups cold water in a large saucepan, place over High heat to boil. When boiling, add rice, reduce heat and cover. Simmer 20 minutes, then take off heat and set aside for 10 minutes.

  2. 2Transfer to a large bowl. Place another small saucepan over High heat. Add 1 cup water. When boiling, add shrimp, reduce heat and simmer 20 minutes. Drain and finely chop.

  3. 3Place a medium nonstick skillet over medium heat. Add 2 tsp. sesame oil. When hot, add onions and garlic, saute 1 minute. Add shrimp, sausage and bamboo shoots, cook another minute.

  4. 4Add 1 Tbsp. soy sauce, fish sauce, sugar and pepper, stir to combine. Add to rice along with 1/2 tsp. oil and cilantro, stir to combine.
  5. 5Roll into 36 balls, place on a baking sheet, cover and refrigerate 2 hours.
  6. 6Meanwhile, whisk together 1/3 cup soy sauce, 2 Tbsp. water, brown suagr, sesame seeds, 1/2 tsp. sesame oil and 1/2 tsp. chili garlic sauce in a small bowl. Serve with rice balls.
