Ingredients:
  • (12) large mushrooms
  • (2 Tbsp.) sliced green onions
  • (1/2 clove) garlic, crushed
  • (1/8 cup) unsalted butter
  • (1/2 cup) low-fat shredded cheddar cheese
  • (1/4 cup) lean ham
  • (1 Tbsp.) light cream cheese

Loaded Mushroom Caps

Hearty Mushrooms stuffed with ham, green onions and cheese.

    Instructions

  1. 1Preheat oven to 400°F.
  2. 2Wipe the mushrooms off with a damp cloth, then remove and chop the stems.
  3. 3In a medium saucepan, combine stems, onions, garlic, and butter over medium heat.
  4. 4Stir in cheese, ham and cream cheese until combined.
  5. 5Spoon the mixture into each mushroom cap and bake for 10 minutes. Enjoy!
