  • (1 Tbsp.) reduced-fat mayonnaise
  • (1/2 tsp.) lemon juice
  • (1/8 tsp.) cracked black pepper
  • (8 very thin slices) wheat bread
  • (2 oz.) smoked salmon, thinly sliced
  • (12 thin slices) European cucumber

Salmon Cucumber Avocado Sandwiches

Thinly sliced smoked salmon, avocado and European cucumber sandwiched between wheat bread.

  1. 1In a small bowl, mix together mayo, lemon juice and pepper.
  2. 2Lay out all 8 slices of bread. Spread mayo on each slice, then top 4 with a thin layer of salmon, avocado and cucumber. Top with remaining bread slices. Enjoy!
