Instructions
1Preheat oven to 400°F. Spray a baking sheet with cooking spray.
2Spray a medium skillet with cooking spray and place over medium heat. Add carrot. Cook 1 minute, then add mushrooms and zucchini and cook another 4 minutes. Add garlic powder, toss to combine.
3Arrange 4 tortillas on greased baking sheet in a single layer. Divide half of the cheese evenly, top with vegetables and the rest of the cheese. Top with other 4 tortillas.
4Bake 6-8 minutes, cut and serve with salsa and sour cream. Enjoy!
