Ingredients:
  • (2 medium) zucchini, halved lengthwise
  • (1/3 cup) onion, diced
  • (12 slices) pepperoni sausage, diced
  • (1/2 cup) grated Asiago or Parmesan cheese

Stuffed Zucchini Skins

Hollowed out zucchini skins stuffed with the zucchini flesh, pepperoni sausage and grated cheese.

    Instructions

  1. 1Preheat oven to 375°F.
  2. 2Use a spoon to scoop out the insides of the zucchini, place in a medium skillet with onion and pepperoni. Place over medium heat, cook 3 minutes.

  3. 3Place zucchini skins on a baking sheet. Fill each skin with filling, top with cheese.
  4. 4Bake 12 minutes, or until cheese is melted and serve.
