Sweet Pumpkin Bars
Soft pumpkin and carrot bars packed with dried fruit and topped with pumpkin seeds.

Instructions
1Preheat the oven to 350°F. Spray a 13x9 in. baking pan with cooking spray.
2Mix together pumpkin, carrot, sugar, cranberries, oil and eggs in a large bowl. Stir in flour, baking powder, cinnamon, baking soda and salt. Pour into greased pan.
3Top with pumpkin seeds and bake 22-25 minutes, or until spongey. Cool on wire rack, cut and serve.
