Instructions
1Preheat oven to 400°F.
2Wrap each head of garlic in foil, place on a baking sheet and bake 45 minutes. Set aside to cool 10
minutes.
3Meanwhile, remove bottom leaves and 1/2 in off top of each artichoke. Fill a large Dutch oven 2/3 full with water and place over High heat.
4Place artichokes in pot stem-sides down. When boiling, cover and simmer on medium-high 45 minutes. When garlic is cool, squeeze pulp out of each clove into a bowl.
5Place a small saucepan over High heat. Add half of garlic and wine. When boiling, cook 2 minutes, add broth and cook another 8 minutes, or until reduced.
6Take off the heat, add butter and salt, stir to combine. Transfer to a blender with rest of garlic pulp.
7Remove the center part of the lid and place a towel over the opening. Blend until smooth, transfer to a serving bowl. Add parsley and serve with artichokes.
