Thin slices of starchy potatoes seasoned with salt and pepper.

Instructions
1Place a slicer to the thinnest setting. Use the safety guard to slice the potatoes over a bowl of cold water. Set aside to soak for 10 minutes.
2Place 2 in. of vegetable oil in a large pan, place over medium high heat.
3Drain potatoes, rinse and blot with
paper towel.
4When oil is 380°, place several potatoes (not too many) in oil and fry 2-4 minutes, or until golden brown and crisp, stirring occasionally. Transfer to paper towels using a slotted
spoon.
5Bring oil back to 380°, then repeat with rest of potatoes. Sprinkle with salt and pepper and serve.
