Spinach and Cheese Bundles
A chopped spinach and cheese filling wrapped in flaky phyllo dough.

Instructions
1Preheat oven to 400°F. Line a baking sheet with parchment paper.
2In a large bowl, combine spinach, cheese, salt, cinnamon and cayenne pepper; set aside. Place a damp kitchen towel over the stack of phyllo dough so it does not dry out.
3Brush one sheet at a time with melted butter, fold in half lengthwise, brush again. Fold into an 8x3 1/2 in. long strip, then cut in half.
4Place 1 Tbsp. filling onto each square, fold up sides and pinch closed. Repeat with remaining phyllo dough to
make 40 total.
5Bake 12 minutes, or until golden brown and serve.
