Sweet and Sour Pickles

  • (1 1/4 lb.) pickling cucumbers, trimmed and cut into 1/4 in. slices
  • (1 1/2 tsp.) salt
  • (1 cup) cider vinegar
  • (1 cup) white vinegar
  • (1 cup) light brown sugar
  • (1 cup) slivered onion
  • (2 cloves) garlic, slivered
  • (1 tsp.) dill seed
  • (1 tsp.) mustard seed

Sweet and Sour Pickles

Pickling cucumbers tossed in a warm sweet and sour sauce.

  1. 1Set a colander in the sink, add cucumbers and salt, toss to combine. Let sit 20 minutes.
  2. 2Place a medium saucepan over high heat. Add vinegars, brown sugar, onion, garlic, dill and mustard seed. Stir to combine and bring to a boil. Once boiling, reduce heat and simmer 10 minutes.

  3. 3Rinse cucumbers and put into a microwave safe bowl. Pour vinegar mixture over cucumbers and toss. Cover and refrigerate at least 10 minutes. Enjoy for up to 10 days!
