Sweet Piquante Poppers

  • (2 14-oz. jars) mild Peppadews, rinsed and drained
  • (1/3 cup) whole wheat couscous, cooked
  • (2 Tbsp.) goat cheese
  • (2 tsp.) extra virgin olive oil
  • (1/4 cup) fresh parsley, chopped
  • (2 Tbsp.) pine nuts, coarsely chopped
  • Salt
  • Freshly ground black pepper

Sweet Piquante Poppers

Mild peppadew peppers stuffed with a mixture of whole-wheat couscous, goat cheese and pine nuts.

  1. 1Cook couscous according to package directions, then add goat cheese and olive oil while warm. Set aside to cool.
  2. 2When cool, add parsley, pine nuts, salt and pepper., stir to combine.
  3. 3Fill each pepper with couscous and serve.
