Instructions
1Preheat oven to 350°F. Spray baking sheets with cooking spray.
2Mix together 2 cups flour, sugar, yeast, salt and caraway seeds in a large bowl, set aside.
3Place a small saucepan over medium-high heat. Add milk, beer and oil. Cook until 120°-130° (use a thermometer). Beat into dry ingredients, add remaining flour gradually until
soft.
4Knead for about 5 minutes on a floured surface. Cover and set aside 10 minutes.
5Separate into 14 equal portions. Roll each portion into a 20 inch long rope, cover and set aside another 10 minutes. Twist each roll into a pretzel and place on baking sheets.
6Use a pastry brush to brush each pretzel with egg. Bake 15 minutes, brush with egg again. Top with Gouda cheese and bake another 12-15 minutes. Cool on wire racks and serve.
