Zucc Sticks

  • (1/2 cup) whole-wheat flour
  • (1/2 cup) all-purpose flour
  • (2 Tbsp.) cornmeal
  • (1 tsp.) salt
  • (1/2 tsp.) freshly ground pepper
  • (3 medium) zucchini, cut into 1/2-by-3-in. sticks
  • (2 large) egg whites

Crispy baked zucchini sticks in a cornmeal breading.

  1. 1With oven rack in center position, preheat oven to 475°F. Spray a large baking sheet with canola or olive oil cooking spray.
  2. 2In a large ziplock bag, mix together wheat and white flours, cornmeal, salt and pepper. Beat egg whites in a small bowl.
  3. 3Using opposite hands, dip each zucchini stick in egg white, drop it in the bag, shake and place on the baking sheet. Spray with cooking spray again.

  4. 4Bake 18-20 minutes, turning halfway through. Enjoy!
