Toasted Deviled Eggs

Ingredients:
  • (8 large) eggs
  • (1/3 cup) reduced-fat ham, minced
  • (1 Tbsp.) green onions, minced
  • (1 Tbsp.) parsley, minced
  • (1 Tbsp.) low-fat mayonnaise
  • (1 tsp.) mustard
  • (1/4 tsp.) fresh thyme, chopped
  • (1/8 tsp.) salt
  • (1/8 tsp.) freshly ground black pepper
  • (2 1-oz. slices) white bread, torn into large pieces
  • Fresh thyme leaves (optional)

Toasted Deviled Eggs

Hard-boiled egg whites stuffed with a chunky ham filling, then topped with breadcrumbs and toasted.

    Instructions

  1. 1Cover eggs with water in a large saucepan and place over high heat to boil. As soon as it boils, remove from heat, cover and let cook 12 minutes.

  2. 2Drain water, place eggs under cold running water until completely cool.
  3. 3Meanwhile, process bread in a food processor until it forms breadcrumbs.
  4. 4Roll each egg on the counter, pressing slightly to break up shell. Peel, slice and remove cooked yolks. Place 4 in a bowl and set 4 aside for later use.

  5. 5Add ham, green onions, parsley, mayonnaise, mustard, thyme, salt and pepper to bowl, stir with a fork, breaking up the yolks.
  6. 6Preheat the broiler.
  7. 7Place halves of egg whites onto a baking sheet. Fill each with 1 tsp. yolk mixture and 1 Tbsp. breadcrumbs. Broil about a minute to toast breadcrumbs and serve.
