  • (2 Tbsp.) balsamic vinegar
  • (1 Tbsp.) olive oil
  • (1 Tbsp.) water
  • (2 Tbsp.) sun-dried tomatoes (packed without oil), chopped
  • (1 Tbsp.) fresh basil, chopped
  • (1 Tbsp.) red onion, chopped
  • (1 1/2 cups) uncooked whole-wheat rotini
  • (1 1/2 cups) 2 in. cut green beans
  • (2 cups) cooked chicken breast, diced
  • (1/4 cup) crumbled blue cheese

  1. 1Fill a large pot with water and place over High heat. When boiling, add pasta and follow cooking times on package. During last 5 minutes, add beans. Drain and place under cold running water.

  2. 2In a small bowl, whisk together balsamic vinegar, olive oil and water. Add tomatoes, basil and onion.
  3. 3Toss pasta with chicken, blue cheese and dressing, serve.
