Quick Tiramisu

  • (1/2 cup) nonfat ricotta cheese
  • (2 Tbsp.) confectioners' sugar
  • (1/2 tsp.) vanilla extract
  • (1/8 tsp.) ground cinnamon
  • (12) ladyfingers
  • (4 Tbsp.) brewed espresso, or strong coffee, divided
  • (2 Tbsp.) bittersweet chocolate chips, melted

Quick Tiramisu

A simplified version of tiramisu with all the same layers you love.

  1. 1In a medium bowl, mix together ricotta, sugar, vanilla and cinnamon.
  2. 2In a 9x5 in. loaf pan, place 6 ladyfingers in a single layer. Top with 2 Tbsp. espresso, ricotta, remaining ladyfingers, other 2 Tbsp. espresso and melted chocolate. Refrigerate 30 minutes and serve.
