Moist Almond Cake w/Cherries

  • (1 cup) all-purpose flour
  • (1 tsp.) baking powder
  • (1/8 tsp.) salt
  • (1/8 tsp.) ground cloves
  • (2/3 cup) granulated sugar
  • (3 1/2 Tbsp.) butter, softened
  • (3 Tbsp.) fat-free cream cheese
  • (2 Tbsp.) almond paste
  • (1/4 tsp.) almond extract
  • (1 large) egg
  • (1/3 cup) 1% low-fat milk
  • (2 Tbsp.) almonds, chopped and toasted
  • (2 Tbsp.) granulated sugar
  • (14.5 oz. can) pitted tart red cherries in water, drained
  • (1 tsp.) powdered sugar

Moist Almond Cake w/Cherries

  1. 1Preheat oven to 350°F. Spray a 9 in. round cake pan with cooking spray.
  2. 2Whisk together flour, baking powder, salt and cloves in a small bowl; set aside.
  3. 3Use an electric mixer on medium to beat together 2/3 cup granulated sugar, butter, cream cheese, almond paste, almond extract and egg.
  4. 4Alternately add flour mixture and milk, starting and ending with flour. Pour into greased cake pan. In a small bowl, combine almonds and 2 Tbsp. sugar.

  5. 5Top cake with almond mixture and cherries, bake 50 minutes or until a toothpick comes out clean. Cool 10 minutes, serve with a dusting of powdered sugar. Enjoy!
