Mint Chocolate Cookies

  • (3/4 cup) whole-wheat flour
  • (3/4 cup) unbleached white flour
  • (1 tsp.) baking powder
  • (1/4 tsp.) salt
  • (1 cup) semisweet chocolate morsels
  • (3 Tbsp.) fat-free sour cream
  • (3 Tbsp.) canola oil
  • (1/3 cup) granulated sugar
  • (1/3 cup) Splenda®
  • (1 tsp.) vanilla extract
  • (1 large) egg
  • (2 Tbsp.) egg substitute or (1) egg white, beaten slightly
  • (1 tsp.) mint extract
  • Powdered sugar

Mint Chocolate Cookies

Sweet chocolate cookies with a refreshing mint taste.

  1. 1In a medium bowl, combine wheat and white flours, baking powder and salt; set aside.
  2. 2Place chocolate chips in a microwave-safe bowl, microwave 30 seconds at a time until melted, stirring after each cycle.
  3. 3Use an electric mixer to beat together sour cream, canola oil, sugar and Splenda®. Add melted chocolate and vanilla, beat well. Add egg, egg substitute and mint extract, beat well.

  4. 4Add flour mixture, beat until just combined. Separate into 4 even sections, wrap with plastic wrap and freeze about 20 minutes, or until firm.

  5. 5Preheat oven to 350°F. Spray 2 baking sheets with canola oil cooking spray. Shape each section of dough into 10 (1 in.) balls, transfer to greased pans.

  6. 6Bake 10 minutes, or until very lightly browned. Let cool, dust with powdered sugar and serve.
