Lite Chocolate Gelato

  • (1/2 cup) natural unsweetened cocoa powder
  • (2 14 oz. cans) “lite” coconut milk, divided
  • (1 tsp.) vanilla extract
  • (3/4 cup plus 2 Tbsp.) sugar
  • (2 Tbsp.) cornstarch
  • (1/8 tsp.) salt

Lite Chocolate Gelato

Creamy Italian chocolate ice cream made with coconut milk.

  1. 1In a medium bowl, whisk together cocoa and about 2/3 cup coconut milk, until it forms a paste. Add more milk if necessary. Add vanilla and stir; set aside.

  2. 2Place a medium saucepan over medium heat. Add rest of coconut milk, sugar, cornstarch and salt. Stir often until small bubbles form around the edges. Simmer 2-3 minutes, stirring the entire time.

  3. 3Whisk into cocoa, set aside to cool 45 minutes. Cover and refrigerate at least 3 hours.
  4. 4Freeze in an ice cream maker, following the directions for timing on the machine. Enjoy!
