Light Chocolate Cupcakes

  • (18.25 oz. box) Devil's Food Cake Mix
  • (1 1/3 cups) water
  • (1/2 cup) fat free sour cream
  • (5 large) egg whites or (3/4 cup) egg substitute
  • (1/4 cup) powdered sugar

  1. 1Preheat oven to 350°F. Place 24 paper cups into 2 cupcake pans.
  2. 2Use an electric mixer on low speed to beat together cake mix, water, sour cream and egg whites. When combined, increase to medium speed and beat another 2 minutes. Fill each cup 3/4 full.

  3. 3Bake 17 minutes, or until toothpick comes out clean. Place on a wire rack to cool. Serve with a dusting of powdered sugar over the top.
