Layered Blueberry Cake

  • (4 Tbsp.) sugar, divided
  • (2 tsp.) all-purpose flour
  • (1/8 tsp.) ground cinnamon
  • (1 cup plus 2 Tbsp.) reduced-fat biscuit/baking mix
  • (1/3 cup) fat-free milk
  • (1 cup) fresh or frozen blueberries

Layered Blueberry Cake

Layers of thick cake, blueberries and cinnamon sugar baked until golden brown.

  1. 1Preheat oven to 350°F. Spray a 1 quart baking dish with cooking spray.
  2. 2Combine 2 Tbsp. sugar, flour and cinnamon in a small bowl, set aside.
  3. 3In a separate bowl, combine biscuit mix, milk and remaining sugar. In greased baking dish, layer half each of batter, blueberries and sugar mixture. Repeat, ending with sugar.

  4. 4Bake 25-30 minutes, or until a toothpick comes out clean. Serve warm or at room temperature. Enjoy!
