Hazelnutty Cookies

  • (2 cups) hazelnuts, toasted and skinned
  • (1 1/4 cups) sugar
  • (4 large) egg whites
  • (1/2 tsp.) salt
  • (1 tsp.) vanilla extract

Hazelnutty Cookies

Easy cookies made with ground toasted hazelnuts and vanilla.

  1. 1With oven racks in center position, preheat oven to 325°F. Place parchment paper on 2 baking sheets.
  2. 2Place nuts and sugar in a food processor. Pulse until fine and set aside in a large bowl. In a separate large bowl, use an electric mixer on High to beat together egg whites and salt until it forms stiff peaks.

  3. 3Add to ground nuts with vanilla, fold to combine.
  4. 4Drop 1 Tbsp. at a time onto the baking sheets, leaving 2 inches inbetween each cookie. Bake 25-30 minutes, switching pan positions halfway through. Cool on wire racks and serve.
