Frozen Cherry Vanilla Pie

  • (1/3 cup) water
  • (1/4 cup) sugar
  • (1 Tbsp.) cornstarch
  • (2 Tbsp.) brandy
  • (12 oz. package) frozen, pitted dark sweet cherries
  • (2 Tbsp.) butter, melted
  • (2 Tbsp.) honey
  • (1 1/2 cups) graham cracker crumbs (about 9 whole crackers)
  • (4 cups) vanilla low-fat ice cream, softened

Frozen Cherry Vanilla Pie

A cherry vanilla ice cream pie over a sweet graham cracker crust with a cherry brandy sauce.

  1. 1Preheat oven to 375°F. Set out a 9 in. pie plate.
  2. 2Place a medium saucepan over High heat. Add water, sugar, cornstarch, brandy and cherries, bring to a boil and stir for 2 minutes. Cover and refrigerate.

  3. 3In a medium bowl, combine butter and honey. Stir in graham cracker crumbs, then spread into a even layer in the pie plate, pressing it into the bottom and sides to form the crust.

  4. 4Bake 8 minutes, set aside to cool. When cherry mixture is cooled, process 1/2 cup in a food processor until smooth. Leave the remainder in the refrigerator.

  5. 5Use an electric mixer on medium to beat the ice cream until smooth. Gently stir the cherry puree in by hand, pour over cooled crust. Cover and freeze 4 hours. Serve with cooled cherry sauce.
