Butterfinger Meringue Sandwich

  • (6) egg whites
  • (2 tsp.) vanilla extract
  • (1/2 tsp.) cream of tartar
  • (1 1/2 cups) sugar
  • (8 oz. carton) frozen whipped topping, thawed
  • (4) Butterfinger candy bars (2.1 oz. each), coarsely crushed, divided

  1. 1Place egg whites in a large bowl, set aside 30 minutes.
  2. 2Preheat oven to 225°F. Use a pencil to draw a 10 in. circle on two sheets of parchment paper. Place pencil-side down on two baking sheets.

  3. 3Use an electric mixer on medium to beat together egg whites, vanilla and cream of tartar until they form soft peaks. While beating on High, add sugar 1 Tbsp. at a time to form stiff peaks.

  4. 4Pour on parchment paper and spread into circles, using the pencil circles as a guide. Bake 50-60 minutes, or until light brown. Turn oven to off and let sit in oven for 1-1 1/4 hours.

  5. 5Before serving, fold 3 candy bars into whipped topping. Spread half over one meringue. Top with other meringue, rest of whipped topping and rest of candy.
