Zucchini Muffins

  • (2 cups) whole wheat flour
  • (1 Tbsp.) baking powder
  • (1/2 tsp.) salt
  • (1 tsp.) ground cinnamon
  • (3/4 cup) nonfat milk
  • (2) egg whites, slightly beaten
  • (1/4 cup) vegetable oil
  • (1/4 cup) honey
  • (1 cup) grated zucchini

Zucchini Muffins

Whole-wheat muffins filled with freshly grated zucchini, cinnamon and honey for sweetness.

  1. 1Preheat oven to 375°F. Spray a standard muffin pan with cooking spray.
  2. 2In a medium bowl, combine wheat flour, baking powder, salt and ground cinnamon, set aside.
  3. 3In another medium bowl, combine milk, egg whites, oil, honey and zucchini. Add dry ingredients, stir to combine.
  4. 4Fill each muffin cup 2/3 full and bake 20 minutes, or until lightly browned. Cool on wire racks and serve.
