Vegetarian Sausage Casserole

  • (2 tsp.) canola oil
  • (1 small) onion, chopped
  • (1 small) green pepper, chopped
  • (1 small) sweet red pepper, chopped
  • (12) egg whites
  • (6) eggs, lightly beaten
  • (1 cup) fat-free milk
  • (16 oz. package) frozen shredded hash brown potatoes, thawed
  • (8 oz. package) frozen vegetarian breakfast sausage patties, thawed and crumbled
  • (1 cup) reduced-fat cheddar cheese, shredded
  • (1 tsp.) salt
  • (1/2 tsp.) pepper

Vegetarian Sausage Casserole

Sauteed vegetables with scrambled egg whites, shredded hash browns and crumbled vegetarian sausage.

  1. 1Preheat oven to 350°F. Spray a 13x9 in. baking dish with cooking spray.
  2. 2Place a small, nonstick skillet over medium-high heat. Add oil. When hot, add onion, green pepper and red pepper. Saute until tender.
  3. 3Beat together egg whites, eggs and milk in a large bowl. Add hash browns, sausage, cheese, salt and pepper mixture. Pour into greased baking dish.

  4. 4Bake 35-45 minutes, or until a knife comes out clean. Cool 10 minutes, cut and serve.
