Sauteed Vegetable Omelette

Ingredients:
  • (4) egg whites
  • (1/4 cup) water
  • (1/4 tsp.) cream of tartar
  • (2) eggs
  • (1/4 tsp.) salt
  • (1 tsp.) butter
  • (1 medium) tomato, chopped
  • (1 small) zucchini, chopped
  • (1 small) onion, chopped
  • (1/4 cup) green pepper, chopped
  • (1/2 tsp.) Italian seasoning
  • (1/3 cup) shredded reduced-fat cheddar cheese

Sauteed Vegetable Omelette

This light and fluffy omelette is filled with sauteed tomato, zucchini, onion and green peppers.

    Instructions

  1. 1Preheat oven to 350°F.
  2. 2Use an electric mixer to beat together egg whites, water and cream of tartar to stiff peaks.
  3. 3In a separate large bowl, beat together eggs and salt for 5 minutes, or until thick. Add egg whites, fold to combine.
  4. 4Spray a 10 inch ovenproof skillet with cooking spray and place over medium heat. Add butter. When melted, add egg mixture. Cook 5 minutes, then transfer to the oven and bake 10-12 minutes.

  5. 5Place another large skillet over medium-high heat. Add tomato, zucchini, onion, green pepper and Italian seasoning, saute until tender. Top half of omelet with vegetables and cheese, fold other half over and serve.
