Ingredients:
  • (1 cup) regular oats
  • (2 cups) low-fat buttermilk
  • (1 2/3 cups) whole wheat flour
  • (3/4 cup) packed dark brown sugar
  • (2 Tbsp.) vegetable oil
  • (1 tsp.) baking powder
  • (1 tsp.) baking soda
  • (1 tsp.) salt
  • (2 large) eggs, lightly beaten
  • (2/3 cup) dried blueberries

Blueberry Oat Muffins

Crunchy oats soaked in tangy buttermilk make up the base for these delicious blueberry oat muffins.

    Instructions

  1. 1In a medium bowl, stir together oats and buttermilk. Cover and refrigerate overnight.
  2. 2When ready to bake, preheat oven to 350°F. Place 24 paper muffin cups in a muffin pan and spray with cooking spray.
  3. 3Use an electric mixer on medium to beat together chilled oat mixture, flour, brown sugar, oil, baking powder, baking soda, salt and eggs. Add blueberries and gently fold to combine.

  4. 4Fill each muffin cup with 1/4 cup batter and bake 15 minutes, or until spongey when touched. Cool on a wire rack and serve.
