Ingredients:
  • (4) whole-wheat flour tortillas (9 in. diameter)
  • (4 large) eggs
  • (1/8 tsp.) salt
  • Freshly ground pepper, to taste
  • (1 tsp.) extra-virgin olive oil
  • (1 can) chopped green chiles
  • (1/2 cup) grated Cheddar or pepper Jack cheese
  • (2 cups) salsa
  • (1/4 cup) reduced-fat sour cream

Southwestern Egg Tacos

These soft breakfast tacos are filled with green chiles and scrambled eggs, then topped with cheese, salsa and sour cream.

    Instructions

  1. 1Preheat oven to 350°F. Wrap tortillas in foil, bake 5-10 minutes.
  2. 2In a medium bowl, whisk together eggs, salt and pepper, set aside.
  3. 3Place a medium, nonstick skillet over medium-low heat. Add oil. When hot, add chiles and stir 1 minute. Pour in eggs and cook 2-3 minutes, stirring often.

  4. 4Top each tortilla with eggs, 2 Tbsp. cheese, salsa and sour cream. Enjoy!
