Vanilla Brown Sugar French Toast

Ingredients:
  • (3 Tbsp.) low- or no-trans fat margarine or butter
  • (5 Tbsp.) reduced-calorie pancake syrup
  • (1/3 cup) packed brown sugar
  • (2 Tbsp. plus 2 tsp.) orange liqueur, divided
  • (8 slices) 1 in. thick French or sourdough bread, crusts removed
  • (3 large) eggs
  • (1/2 cup) egg substitute
  • (1 1/2 cups) fat-free half-and-half
  • (1 tsp.) vanilla extract
  • (1/4 tsp.) salt
  • Fresh berries
  • Light whipped cream

Vanilla Brown Sugar French Toast

Thick French bread soaked in a brown-sugar orange syrup, baked with eggs then topped with fresh berries and whipped cream.

    Instructions

  1. 1Spray a 13x9 in. baking dish with cooking spray.
  2. 2Place a small nonstick saucepan over medium heat. Add margarine/butter and let melt.
  3. 3When melted, add syrup, brown sugar and 2 Tbsp. orange liqueur. Stir until sugar dissolves, then pour into greased dish.
  4. 4Whisk together eggs, egg substitute, half-and-half, vanilla, 2 tsp. orange liqueur and salt in a small bowl.
  5. 5Arrange bread into an even layer in the bottom of the pan, top with egg mixture, cover and refrigerate at least 8 hours, up to overnight.
  6. 6Let french toast sit at room temperature while oven preheats to 350°F.
  7. 7Bake 35-40 minutes, or until light golden brown. Top with whipped cream and berries and serve.
